Veggie Lasagna

I have no Italian in my blood (that I know of), but I think in a past life I was an Italian grandmother. Many of my favorite foods to eat and cook are Italian or Italian-inspired. Something about the combination of flavorful cheeses with tomatoes, basil and garlic either mixed with pasta or melted on bread just can’t be beat in my book. Craving this scrumptious combination and also looking for a good use for some zucchini, spinach and sun-dried tomatoes, I decided to create my own veggie lasagna recipe.
